One of the new generation of young “micro-négociants”, David Moret emphasizes an abundance of fruit and density in his wines : grapes are selected from some of the best known domaines in Burgundy with an insistence on organic methods, ploughing and low yields.
Purity is the hallmark of Moret's wines, further enhanced by abstaining from any use of chemicals or industrial yeasts during fermentation and élevage.
