Domaine Laffay

Thierry Laffay is a firm believer in allowing the vines to build up their own natural resistance : no herbicides or pesticides have been used in his vineyards for nearly 20 years, nor does he employ anti-rot sprays or copper-based solutions in his treatments, and, he is one of the few producers in Chablis to still harvest his crop by hand.

This is a domaine that can be considered organic in all but name.
