Laurent Cognard is of the new generation of young, Burgundy growers who upon taking over the reins of the family domaine, chose to eschew the practice of selling the estate's production to negociants (or in this case, the local coop), instead vinifying, bottling and selling his own wines.
The vines are managed organically, and in vinification Laurent prefers a light touch of oak to enhance the lemony-freshness of his Premier crus.
